butterscotch bread pudding

So this past weekend, I made bread pudding for the first time. And not just any bread pudding, butterscotch bread pudding. Delicious.  It was a super simple recipe I found online and I post it here for posterity so I don’t lose it.

Butterscotch Bread Pudding

Serves 8 (but more likely 12)

  • 1 (10.75 ounce) loaf day-old bread, torn into small pieces
  • 2 cups milk
  • 2 cups half and half
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 3 eggs beaten
  • 2 teaspoons vanilla extract
  • 1 cup butterscotch chips

Preheat oven to 350° and butter a 9 x 13 baking dish

In a large bowl, combine bread, milk, sugar, butter, eggs, vanilla and butterscotch chips; mixture should be the consistency of oatmeal. Pour into prepared pan.

Bake in preheated oven 1 – 1.5 hours, until set to personal liking. I like a firmer bread pudding so I baked mine for 1.5 hours.  If you prefer a looser bread pudding, bake for about 1 hour.

Serve warm or cold. Yummy with a scoop of ice cream.
